Here's a shot of the Carnival Parade in Nice, with a couple of large floats. While people in costume dance on the moving platforms, huge figures of what look like balloon figures to me wave.
At first I thought there was something going on, but Limonadiers are indeed Lemonade Makers. It seems to me unlikely that the trade was sufficiently large to afford such a display. Perhaps, like the crews in New Orleans' Mardi Gras, there were other people involved. Or perhaps the trade in lemonade in Nice was more prosperous than I would imagine, and not limited to small children at home-made stands selling the beverage for five centimes for a small cup.
