How long before a certain food becomes traditional?
Thai food, Indian food, ... traditional SE Asian food is known to be spicy, but the Chili pepper's origin is Latin America.
They have been eating food that wasn't hot for thousands of years.
They had many other spices, black pepper, garlic, ginger root, ... but not the peppers that give it its characteristic heat.
